The star of the show is my Baja Fiesta spice blend, a vibrant mix of cumin, coriander, paprika, and a touch of heat. Baja Fiesta Burrito Bowls
Makes 2-4 servings, depending on how many toppings you use!
Ingredients:
For the Chicken:
1 lb boneless, skinless chicken breasts or thighs, cubed
1 Tbsp extra virgin olive oil
2 Tbsp Baja Fiesta
Juice of 1 lime
For the Bowl:
2 cups cooked rice (quinoa works great too!)
1 (15-oz) can black beans, rinsed and drained
Any/all of the following optional toppings: corn kernels (thawed and rinsed if frozen), diced tomatoes, shredded romaine lettuce, shredded cheese, minced cilantro, guacamole or diced avocado, salsa, sour cream, lime wedges
Instructions:
Marinate the Chicken: In a bowl, toss the cubed chicken with olive oil, Baja Fiesta spice blend, and lime juice. Let marinate for at least 15 minutes, or up to 30 minutes for extra flavor.
Cook the Chicken: Heat a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, or until cooked through and golden brown. Remove from the pan and set aside.
Assemble the Bowls: Divide the cooked rice among bowls. Top with black beans, cooked chicken, and the rest of your toppings of choice. Feel free to let everyone build their own. There is no wrong way to party!
