Baja Fiesta Rice

Baja Fiesta Rice

Makes 8 servings


Ingredients:

  • 2 cups long grain white rice

  • 2 tablespoons extra virgin olive oil

  • 1/2 medium yellow onion, minced

  • 1 medium tomato (such as Roma or Plum), diced

  • 4 cloves garlic, minced

  • 1 teaspoon Baja Fiesta

  • 1 teaspoon kosher salt

  • 2 tablespoons tomato paste

  • 3 ½ cups broth (vegetable or chicken)

  • Cilantro, for serving (optional)


Rice Cooker Directions: Rinse rice in a fine mesh strainer until water runs clear. Drain and add to your rice cooker, along with remaining ingredients. Stir to combine. Close rice cooker and use White Rice setting to cook rice. When finished, fluff rice, and serve topped with fresh cilantro, if desired.


Stovetop Directions: Rinse rice in a fine mesh strainer until water runs clear. Drain and set aside. Heat oil in a medium saucepan over medium-low heat. Add the rice and sauté, stirring frequently, for a minute or two. Add the onion, tomato, garlic, Baja Fiesta, and salt. Stir to combine. Add the tomato paste and stir to coat. Add the broth, and stir until the tomato paste has dissolved. Bring mixture to a boil, reduce heat to low, cover, and cook 20 minutes. Remove from heat, and allow to rest 5 minutes. Fluff rice and serve topped with fresh cilantro, if desired.
