Dark Roast Dreams Lamb Chops
Makes 2 servings
Ingredients:
1 rack of lamb, cut into 8 individual chops
2 tablespoons extra virgin olive oil
2 tablespoons Dark Roast Dreams
Directions:
In a small bowl, combine the olive oil and Dark Roast Dreams. Pat the lamb chops dry with paper towels.
If you have time, place the lamb chops in a shallow dish and coat them with the spice mixture then cover and refrigerate for up to 2 hours for deeper flavor. If you're in a rush, you can skip the marinating, and go straight to the next step after coating the chops with the spice mixture.
Heat a cast iron skillet or heavy-bottomed pan over medium-high heat. Once hot, add the lamb chops (discarding any excess marinade) and sear 2-3 minutes per side, or until desired doneness is reached (130F for medium-rare).
Remove the chops from the pan and rest for 5 minutes before serving alongside your favorite side dishes.
