Easy Spiced Shakshuka

Makes 6 servings

Ingredients:

  • 2 tablespoons extra virgin olive oil

  • 1 large yellow onion, diced

  • 2 red bell peppers, diced

  • 3 cloves garlic, minced

  • 1 tablespoon Harissa Lookin' At You, Kid

  • Kosher salt

  • 1 28-ounce can crushed tomatoes

  • 6 large eggs

  • 1/4 cup fresh minced parsley

  • 1/4 cup fresh minced mint

  • Warm flatbread, for serving

Directions:

Heat olive oil in a large skillet over medium heat. Add the onions, bell peppers, garlic, and Harissa Lookin At You, Kid. Cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes.

Add the tomatoes and bring to a boil. Lower to a simmer, cover, and cook, stirring occasionally, about 15 minutes. Uncover, and cook another 5-10 minutes or so until mixture thickens slightly. Season to taste with kosher salt.

Use the back of a large spoon to make 6 indentations in the tomato mixture and carefully crack an egg into each well. Cover the skillet and gently simmer until the egg whites are set, about 4-5 minutes.

Uncover, sprinkle with fresh herbs, and serve immediately, along with some warm flatbread for dipping.
