Grilled Curry Chicken Skewers
Makes 4 servings
Ingredients:
2 pounds boneless, skinless chicken thighs
1/2 cup plain Greek yogurt
2 tablespoons Spicy Coconut Curry blend
1 tablespoon vegetable oil
Directions:
Cut chicken thighs into 1- to 1 1/2-inch cubes and place in a ziplock bag.
In a small bowl, mix together the yogurt, Spicy Coconut Curry, and oil. Transfer yogurt mixture to the bag with the chicken. Seal the bag and massage to coat the chicken completely. Chill at least 30 minutes (and up to 1 day).
If using wooden skewers, soak skewers in water for at least 30 minutes to prevent burning.
Preheat a grill with two zones - one medium and one medium-high. Thread marinated chicken onto 4 skewers. Grill over medium heat first, turning occasionally, until chicken starts to brown, about 10 minutes. Move skewers to medium-high zone and cook, turning occasionally to prevent burning, until chicken is cooked through (i.e., an instant-read thermometer registers 165F) and lightly charred.
