Mediterranean Turkey Burgers

Looking for a healthy but super flavorful twist on burger night? These Mediterranean Turkey Burgers are your answer! The homemade patties are packed with juicy flavor, thanks to the addition of shredded zucchini, crumbled feta, and my small batch Electric Za'atar spice blend, a harmonious combination of sumac, toasted sesame seeds, kosher salt, thyme, marjoram, and oregano, which brings a delicious Mediterranean twist to every bite.

Makes eight 8-ounce patties


Ingredients:

  • 1 large zucchini

  • 3 pounds lean ground turkey

  • 3 cloves garlic, minced and divided

  • 1 shallot, minced

  • 2 tablespoons Electric Za'atar, divided

  • 1 teaspoon kosher salt

  • 8 ounces crumbled feta cheese, divided

  • 4 ounces plain Greek yogurt

  • Juice of 1 lemon

  • Brioche buns, large lettuce leaves, sliced cucumber, and sliced cucumber, for serving



Directions:


Trim the ends from the zucchini and use the large holes of a box grater to grate the zucchini. Transfer grated zucchini to a clean dish towel and twist the towel to squeeze out as much liquid as possible.


Transfer the zucchini to a large mixing bowl, along with the ground turkey, half of the minced garlic, the minced shallot, 1 1/2 tablespoons of the Electric Za'atar, the kosher salt, and half of the crumbled feta cheese. Gently mix it all together using your hands so that it is thoroughly mixed but not overworked. Form the mixture into eight equal balls, then flatten into patties slighlty larger in diameter than the brioche buns you're using.


Heat a cast iron grill pan or grill over medium-high. Grill patties 5-7 minutes on each side, until the interior temperature reaches 160F.


While the patties are cooking, mix together remaining garlic, remaining Electric Za'atar, remaining crumbled feta cheese, Greek yogurt, and lemon juice in a medium bowl.


When the patties are done, transfer them to a plate then lightly toast the inside of the buns on the grill pan.


Spread some of the yogurt sauce on each of the bottom buns, then top with lettuce, the patties, the sliced tomato and cucumber, and the top bun. Serve immediately and enjoy!!


Make Ahead: These patties freeze wonderfully. Freeze them in a single layer on a parchment-lined baking sheet. Once completely frozen, place patties in an airtight container and freeze for up to 3 months. Thaw completely in the refrigerator before grilling.
