Mojo-Marinated Grilled Fish

Mojo-Marinated Grilled Fish

Serves 2


Ingredients:

  • 2 5-ounce fish fillets, skin on or off (try barramundi, snapper, halibut, grouper, or even salmon)

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon plus 2 teaspoons Four-Citrus Mojo, divided

  • 1/2 cup Greek yogurt

  • 2 cloves garlic, minced

  • 1 lemon, halved

  • Fresh parsley, minced (for serving)


Directions:


Pat the fish dry with paper towels and place in a shallow dish. In a small bowl, combine the olive oil and 1 tablespoon of Four-Citrus Mojo. Spread the marinade all over the fish and place dish in the refrigerator to marinate for 15-30 minutes.


In a small bowl, mix together the remaining 2 teaspoons Four-Citrus Mojo with the yogurt, minced garlic, and the juice from one half of the lemon. Set aside.


Preheat grill to medium-high heat (around 400F). Lightly oil the grates to prevent sticking. Place the remaining lemon half, cut side down, and fish fillets on the preheated grill, skin-side down if using skin-on fillets. Grill the fish 3-4 minutes per side, or until it is just opaque all the way through and flakes easily with a fork.


Transfer the fish to plates, squeeze the grilled lemon half over the fillets, and sprinkle with some freshly minced parsley. Serve immediately, along with the yogurt sauce and your favorite sides, such as steamed rice or quinoa and grilled vegetables.
