Really Good Bourbon BBQ Sauce
Makes about 2 cups of sauce
Ingredients:
1 small white onion
2 cloves garlic
2 tablespoons vegetable oil
1 tablespoon Good on Everything Rub
1/4 cup bourbon
1 1/2 cups ketchup
1/4 cup molasses
2 tablespoons Worcestershire sauce
3 tablespoons apple cider vinegar
2 tablespoons Dijon mustard
Directions:
Peel and cut the onion in half through the root. Grate the onion halves on the large holes of a box grater, and grate the garlic on the smallest holes.
Heat the oil in a medium pot over medium heat. Add onion and garlic and cook, stirring occasionally, until softened. Stir in Good on Everything Rub and cook, stirring constantly, about 30 seconds. Remove pot from heat and carefully add bourbon. Return to heat and cook until bourbon is mostly evaporated.
Stir in ketchup, molasses, Worcestershire, vinegar, and mustard and bring to a boil. Reduce to a simmer and cook until onions have essentially melted completely. Allow sauce to cool completely before storing.
Make ahead: Sauce will keep in the refrigerator for up to a week and can be frozen for up to 3 months.
