Street Corn Fritters
Makes about 20 fritters
Ingredients for Fritters:
2 large eggs
2/3 cup whole milk
2 teaspoons Street Corn Sprinkle
1 cup all-purpose flour
2 teaspoons baking powder
3 cups corn kernels (fresh or frozen and thawed)
1/4 cup minced cilantro
1/2 cup crumbled feta or cotija cheese
Ingredients for Dipping Sauce:
1/2 cup Greek yogurt
1 tablespoon lime juice
1/2 cup crumbled feta or cotija cheese
1/4 cup minced cilantro
1 teaspoon Street Corn Sprinkle
Directions:
In a large mixing bowl, whisk together the eggs, milk, and Street Corn Sprinkle. Whisk in the flour and baking powder until just combined. Stir in the corn, cilantro, and cheese.
Heat a 12-inch cast iron skillet over medium-low heat and add enough oil to coat the bottom of the skillet. Once the oil is shimmering, add a heaping tablespoon of the batter, using the back of the spoon to flatten it slightly. Repeat with more batter so that you have 4-6 fritters at once. Cook about 2 minutes on each side, until golden, adding more oil if necessary.
Transfer finished fritters to a baking sheet lined with a paper towel. Repeat until all the batter has been used.
Meanwhile, mix together all the ingredients for the dipping sauce in a small bowl.
Serve the fritters warm or with room temperature with dipping sauce alongside.
