Yuletide Cheer Gingerbread Cupcakes
Makes 12 standard size cupcakes
Ingredients for Cupcakes:
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 tablespoon Yuletide Cheer
1/4 teaspoon kosher salt
1/2 cup (8 tablespoons or 4 ounces) unsalted butter, melted
1/2 cup packed dark brown sugar
1/2 cup molasses
1 large egg, room temperature
1/2 cup water
Ingredients for Frosting:
6 tablespoons unsalted butter, room temperature
8 ounces cream cheese, softened
4 cups powdered sugar
1 teaspoon Yuletide Cheer
1 to 2 tablespoons milk (or milk substitute), enough to make a spreadable frosting
Directions:
Preheat the oven to 350°F. Line a cupcake pan with paper liners.
Make the cupcakes: Combine the flour, baking soda, Yuletide Cheer, and salt. Set aside. Whisk together the melted butter, brown sugar, molasses, egg, and water. Add the wet ingredients to the dry ingredients and stir to combine, being careful not to overmix. Spoon the batter into the prepared cupcake pan. Bake cupcakes for about 20 minutes, until a toothpick inserted in the center of one comes out with just a couple of crumbs. Remove the cupcakes from the oven, and transfer them to a rack to cool for 30 minutes.
Make the frosting: Beat together the butter and cream cheese until light and fluffy. Add the sugar and Yuletide Cheer, beating well. Add the milk a little at a time, until the frosting is spreadable. Frost cupcakes using a piping bag or spatula. Sprinkle with a little extra Yuletide Cheer, if desired.
