Ingredients: Rolled Oats, Brown Sugar, Unbleached Enriched Hard Wheat Flour (Wheat, Malted Barley, Niacin (Vitamin B3), Reduced Iron, Thiamin Mononitrate (Vitamin B1), Riboflavin (Vitamin B2), Folic Acid), Dried Cranberries, Pepitas (Pumpkin Seeds), Baking Soda, Kosher Salt, Autumn Spice (Ceylon Cinnamon, Nutmeg, Allspice, Cloves, Ginger, Cardamom)

What you need: 4 ounces (1 stick) unsalted butter, room temperature; 1 large egg, room temperature, 2 tsp vanilla.
 
Instructions: Using a stand mixer fitted with the paddle attachment or a handheld mixer, beat butter until light and fluffy. Add egg and vanilla extract, and beat on high for about 30 seconds. Turn the mixer to low, add dry ingredients, and mix until just combined. Scoop the dough into single heaping tablespoons onto a parchment-lined baking sheet. For best results, freeze shaped dough for at least an hour before baking. Heat oven to 350F. Bake cookies until the edges are light golden brown, about 10-12 minutes. Remove from oven and allow to cool slightly on baking sheet before transferring to a wire rack to cool completely.
