Pasta e Ceci is a traditional Italian recipe and is one of our favorite Italian comfort foods. Made with garbanzo beans (aka "ceci") and perfectly tiny pasta shells, this delicious soup is seasoned with A Bite of Good Mambo Italiano spice blend and gets a subtle umami boost from nutritional yeast, which mimics the parmesan rind usually used in a traditional Pasta e Ceci recipe.
Available all year because it's always soup season around here!
Ingredients: Shell Pasta (Semolina, Durum Flour, Egg, Niacin, Iron, Thiamin Mononitrate, Riboflavin, Folic Acid), Garbanzo Beans, Minced Onion, Nutritional Yeast, Mambo Italiano (Kosher Salt, Basil, Rosemary, Oregano, Garlic, Onion, Thyme, Parsley, California Chile)
What you need: 6 cups vegetable or chicken broth; 2 medium carrots (peeled and sliced); 2 stalks celery (sliced); and 1 bunch kale/collards/spinach, roughly chopped (optional).
Cooking Instructions: Remove bag of pasta from jar and set aside. Add remaining contents of jar to a large pot, along with broth and 2 cups water. Bring to a boil then simmer, covered, 2 hours, stirring occasionally. Add carrots and celery, and simmer 30 minutes. Add pasta and greens (if using) and simmer an additional 20 minutes, until pasta is al dente.
