What You'll Need: 8 ounces (2 sticks) unsalted butter, room temperature; 1 cup extra-crunchy peanut butter, room temperature; 2 large eggs, room temperature; 2 teaspoons vanilla extract; 1/2 cup chopped roasted peanuts (optional for extra crunch).
Instructions: Using a stand mixer fitted with the paddle attachment or a handheld mixer, beat butter and peanut butter until fluffy. Add eggs one at a time, followed by the vanilla extract. Beat on high about 30 seconds. Adjust the mixer to low, add the dry ingredients, and mix until just incorporated. Drop dough onto baking sheet lined with parchment in golf ball sized spoonfuls about 2 inches apart. Dip a fork in water and then press the fork into the dough, making a criss cross pattern on the top. For best results, freeze prepared dough for at least an hour before baking. Heat oven to 350F. Bake cookies 10-12 minutes, until cookies are just slightly brown along the edges. Allow to cool slightly on baking sheet before transferring to a wire rack to cool completely.
