What You'll Need: 4 ounces (1 stick) unsalted butter, room temperature; 3/4 cup molasses; 1 large egg, room temperature.
 
Instructions: Using a stand mixer fitted with the paddle attachment or a hand mixer, beat together the butter, molasses, and egg on high until fully combined. Adjust the mixer to low, add the dry ingredients, and mix until just combined. The dough will be very stiff, so use your hands to combine thoroughly if necessary. Roll dough out between two lightly floured pieces of parchment to about 1/4" thickness. Use cookie cutters to cut dough into desired shapes, re-rolling the dough as needed to avoid waste. Place cookies on a parchment-lined baking sheet an inch or so apart. Freeze prepared cookie dough for at least an hour before baking. Heat oven to 350F. Bake 10-12 minutes until just golden brown around the edges. Allow to cool slightly on the baking sheet before transferring to a wire rack to cool completely. Decorate if desired.
